Francesco DeFuria grew up in Italy watching his grandmother passionately create meals from scratch for his family and he knew he wanted to follow in her footsteps. Now, similar to his grandmother, DeFuria puts his heart and authentic Italian technique into every dish he creates as room chef of Bistro 57 at Aliante Casino + Hotel + Spa.
“I am excited to be able to bring my homeland of Italy into northern Las Vegas each day I enter Bistro’s kitchen,” said DeFuria.
DeFuria received his culinary training in Tuscany and most recently served as owner of his own catering company, DeFuria Catering, in Los Angeles from 2007 to 2013. His previous experience includes three years as executive chef at Angolo Divino Ristorante in Los Angeles and one year as chef at Valentino Ristorante in Las Vegas.
When DeFuria is not bringing the taste of Italy to Las Vegas, he enjoys spending time with his wife and two daughters horseback riding and soaking up the sun on the beach.
